Which cut for which cooking

Three ways to cook, and the pieces that suit each one.

  • A steak on the bars of a grill

    For the grill

Rib-eye, sirloin, rump and flank: hot and quick, then rested before slicing.

  • A roast tied with string in a roasting pan

    For the oven

Rib on the bone, topside and a rolled pork shoulder: browned first, then roasted gently.

  • A cast-iron pot with its lid, steam rising

    For the pot

Chuck, shin and brisket: the cheaper cuts, which turn tender after hours of slow braising.
